Home cooks looking to simplify meal preparation can turn to a batch-cooking strategy involving loaded burritos designed for long-term freezer storage. Unlike store-bought frozen options that often consist primarily of tortilla, this recipe prioritizes substantial fillings, including seasoned ground meat, Spanish rice, refried beans, sautéed vegetables, and cheddar cheese. The process involves cooking each component separately to preserve distinct textures and flavors, then assembling and freezing them individually.
The entire batch yields at least 10 large burritos at an estimated cost of $25, or roughly $2.50 per serving. The method requires browning a two-pound blend of ground beef and pork with spices such as chili powder, cumin, smoked paprika, and garlic powder, along with a bouillon paste and water, simmering until the liquid evaporates. Separately, long-grain white rice is prepared with tomato sauce, drained diced tomatoes, water, chicken bouillon, and similar seasonings until tender.
A third component involves sautéing a large yellow onion and green and red bell peppers until soft, then adding frozen corn and minced garlic for the final minute of cooking. Once all elements have cooled, refried beans are spread across large flour tortillas, topped with the rice, meat, vegetable mixture, and shredded cheddar cheese. The tortillas are rolled tightly, wrapped first in parchment paper and then in foil, and placed in the freezer to set individually.
To serve, the foil is removed and the burrito is reheated until the center reaches a high temperature. This approach allows for quick meal resolution on busy days by utilizing pre-portioned, frozen items.
