EDMONDS A fresh morning destination has arrived for Edmonds residents, with the debut of Rooster Bagel Cafe Kitchen Bar over the weekend.
Chef and mixologist Niles Peacock launched his second Edmonds establishment in the historic Main Street corridor, occupying the space formerly held by The Loft. The new venture introduces his century-old sourdough starter, long celebrated for powering his prize-winning pizzas, to the breakfast table.
“Our community has a vibrant and expanding food and beverage landscape,” Peacock noted. “Bringing something here that’s still missing feels like a meaningful contribution.”
The café operates Monday through Sunday from 8 a.m. to 3 p.m., initially offering four bagel varieties and multiple cream cheese spreads. Operations will broaden as the team settles in, according to Chief Operating Officer Hillary Ness.
Local feedback consistently underscored a desire for quality bagels, she added.
“People kept saying, *We need bagels*,” Ness said. “And once you start thinking about it, how many ways *can* you enjoy one, the possibilities really open up.”
Upcoming additions include breakfast sandwiches, chicken cutlets coated in crushed bagel crumbs, and seasoned bagel chips served with dips. Ness envisions a future where bagel-inspired elements appear across menus at all hours.
Current selections include plain, everything, cheese, and a Maldon Salt variety, tailored for those who appreciate an extra savory crunch. Each batch is crafted using slow-fermented sourdough.
Customers are encouraged to suggest future flavors, with the team welcoming input through both casual conversation and social media.
“We aim to grow alongside the city,” Ness said, “responding not just to evolving needs but to the specific tastes people express.”
Coffee service launches with beans from Forecast Coffee Company, with full bar options, including cocktails, wine, beer, and adaptogen-infused nonalcoholic drinks, planned for later this year.
“The goal is to build a hub where people naturally gather,” Peacock explained. “Morning starts with a bagel and espresso; midday might bring a wine tasting or mocktail break; evenings could end with a seasonal cocktail. We want to meet folks at every stage of their day.”
The name *Rooster* reflects both Peacock’s surname and the bird’s traditional role as a daily herald. An eggshell-blue façade at 515 Main Street invites visitors inside, where Peacock emphasizes warmth and accessibility.
“Hospitality is my guiding principle,” he said. “No matter the project, it’s almost always rooted in service to others.”
